Bison meat tastes like sweet beef, not gamey or wild. And it is the most healthy meat, being lowest in cholestrol and fat and high in protein and iron. It has very little fat content so should be grilled quickly to avoid drying it out. Bison meat can be used in any recipe as a replacement for ground beef or ground turkey. Try bison tacos, bison meatballs, bison chili. Cook burgers and steaks rare to medium rare to avoid them from drying out.
